GIJON NOUGAT AND QUINCE MOUSSE

Ingredients:
  • Base:
  • 150 g Marie biscuits.
  • 60 g butter.
  • Mousse:
  • 300 g Gijon nougat.
  • 125 g Valliser quince.
  • 600 g double cream (35% total fats).
  • 80 g sugar.
  • 2 eggs.
  • 150 ml milk.
  • 15 g powdered neutral pectin.
  • A pinch of salt.
  • 100 g almond praline.
Preparation:

The first thing to do is to make the base for the dessert. Mash the biscuits and set them aside.

Then, melt some butter in the microwave and mix the biscuits and butter together to obtain a homogeneous paste. Then, place this mixture into a cake ring on a tray covered with baking paper.

Carefully flatten so the mixture is smooth and leave in the fridge for half an hour.

Meanwhile, put a pan with milk on to heat up, adding the nougat and little pieces of quince. On a very low heat, keep stirring until the ingredients fully liquefy and a mix is created. Avoid sticking by stirring continuously.

Beat the whites of the eggs with a pinch of salt until they are stiff.

Next, put the yolks and sugar into a bowl. Beat with a whisk to obtain a frothy whitish mixture.

Then, add a little of this mixture to the pan with the nougat and mix in well. Next, add the remaining yolk mixture until it is completely incorporated.

Light the hob and cook the mixture for two to three minutes on a low heat. Stir continuously. Then, add the powdered pectin and mix it in thoroughly. Switch the hob off and let the mixture cool.

Whip the cream and add it to the nougat mixture. Whisk until homogeneous.

Next, add the stiff egg whites and use a spatula to mix them in well. The movement must be circular and from below to above so the whites do not fall.

Then, put the mousse into the mould, smoothing it down well to leave a perfect surface. Lastly, add the almond praline on top and leave the cake in the fridge for around four hours.

Tip:

To remove the cake, moisten a kitchen cloth with hot water and run it around the baking ring. The cake is best eaten very cold.
