CHEESECAKE WITH QUINCE

Ingredients:
  • 500 g natural yoghurt (or 4 pots).
  • 200 g sugar.
  • 400 g spreadable cheese (e.g. Philadelphia), cottage cheese or fresh 'mató'.
  • 4 eggs.
  • 60 g flour.
  • One spoonful bicarbonate.
  • 200 g Valliser quince.
Preparation:

Grease a cake tin with a little oil and preheat the oven to 160º.

Add all the ingredients to a bowl in any order and whisk them manually (or use a blender) until the mixture is fine and homogeneous. Pour the mixture into the tin.

Place the tin in the preheated oven for about 35 minutes. Check readiness with a toothpick. If it comes out clean, the cake is ready.

Cover the cake and let it cool in the fridge. Remove from tin and serve.

Tip:

To personalise the cake, why not decorate with fresh fruit or dried fruit & nuts.
